Pancetta is an Italian smoked bacon, with a unique mild spicy pork flavour, it contains seasonings, cinnamon, nutmeg, cloves and juniper berries these adds to its scrumptious taste.

Our Pancetta is fresh, once opened it can be tightly wrapped and refridgerated up to three weeks, or frozen up to six months.

STUFFED MUSHROOMS WITH PANCETTA & MOZZARELLA  

Ingredients

  • 5 cap mushrooms
  • 6 chestnut mushrooms
  • 1 green pepper
  • 1 red onion
  • 4 oz pancetta
  • 4 oz buffalo mozzarella
  • 5 tbsps cream
  • 3 slices of wholemeal bread to be used for the breadcrumbs
  • 1 tbsp oregano 

How to Cook: 

De-stalk the cat mushrooms and moisten the bases with extra virgin olive oil, into which the stuffing will be placed. Into a saucepan, cut up the cat mushrooms stalks and add them to the chopped red peppers, onions, oregano and Pancetta.  

Place the saucepan onto a medium heat and brown off the pancetta. Then leave the mixture to simmer. With the stuffing simmers, blend the wholemeal bread to make breadcrumbs. With the stuffing mixture ready, mix in the cream. Spoon the stuffing mixture into the Cat mushroom bases. Cover the stuffing with breadcrumbs before finally adding the mozzarella on top. They can then be left on the side until 30 minutes before serving.  

Place the stuffed mushrooms into the oven for 30 minutes at 180 degrees. 

KING SCALLOPS WITH PISTOU & PANCETTA

Serves 4

Ingredients

  • 12 slices pancetta bacon
  • 20 king scallops, shelled
  • 2 tbsp olive oil
  • 1 large garlic clove, peeled and crushed
  • Finely grated zest and freshly squeezed juice ½ lemon
  • Freshly ground black pepper
For the pistou
  • Large bunch fresh basil, plus extra leaves for garnishing
  • 75g sweet pecorino cheese, roughly broken
  • 50g pinenuts
  • 2-3 tbsp olive oil 

How to Cook: 

To make the pistou, put the basil, pecorino cheese, pine nuts and a drizzle of olive oil in a blender or food processor. Blitz to combine thoroughly and set aside.  

Fry the pancetta in a large non-stick, frying pan for about 5 minutes until crisp on both sides. Remove from the pan and keep warm.

Return the pan to the heat and cook the scallops in the pancetta fat over a high heat for 2 minutes until golden and tender, turning halfway through the cooking time. Remove from the pan and keep warm. 

Heat the 2 tbsp olive oil in the frying pan. Add the crushed garlic and fry for about a minute without browning. Return the scallops to the pan and stir in the basil pistou, plus the lemon zest and juice. Stir well until hot and season with black pepper to taste. Don’t allow the scallops to overcook or they will toughen. 

Spoon the scallops and sauce onto four serving plates. Top with pancetta and fresh basil leaves. Serve with fresh, crusty bread.
