Like Squid and Octopus, the Cuttlefish is a member of the group known as Cephalopods. Often overlooked in preference to Squid, therefore not as popular as it deserves to be. 

Bell shaped, hollow body sac contains the hard white smooth cuttle shell. The body has a frilled 'fin' all the way round the edge and eight medium and two long tentacles. The colour varies but is often a deep brownish violet or gray.

The flesh cooks from a pale, translucent pinkish grey, to a milky white colour and is tender, but firm to the bite.

There are many excellent Mediterranean receipes for Cuttlefish and it can be substituted in any recipe calling for Squid.
