Goose fat is a versatile cooking ingredients, which can be used in roasts and all kinds of savoury recipes.

Goose fat is incredibly versatile. With its rich, silky texture and subtle, savoury flavour, it has rightly become famous for making the ultimate roast potatoes, but the unique fat can be used to make so many more delicious dishes.

Kept refrigerated goose fat is a solid fat, and fairly liquid at room temperature. It solidifies between 16°C and 22°C and has a melting point between 25°C and 37°C. Notably, Goose Fat has a high burning (or smoke) point which means foods can be cooked at a high temperature without the fat burning or breaking down.

It also has a low proportion of saturated fatty acids compared to other animal fats such as butter and lard (see health section).

The biggest selling point however is the unsurpassed taste of foods cooked using Goose Fat and traditionally has been prized in Europe for frying and roasting vegetables.

GOOSE WITH BRANDY SAUCE

Ingredients

  • 1 goose, a 4kg goose will serve 6-8 people
  • 150ml orange juice
  • 1 tablespoon caster sugar
  • 1 cinnamon stick
  • 3 whole cloves
  • 225g kumquats, sliced (optional)
  • 1 teaspoon cornflour, blended in a little cold water
  • 1-2 teaspoons Cointreau or brandy
  • Fresh parsley or chervil to serve

How to Cook:

Preheat the oven to 180°C, 350°F, gas mark 4

Place the goose in a deep roasting tin and prick along each side of breast. Cover with foil and roast in the oven for 15 minutes per 500g. Remove foil for last 15 minutes of cooking

Place the orange juice and sugar in a saucepan with the cinnamon sticks and cloves. Heat until the sugar dissolves 

If using, stir in the kumquats and cook for a further 2-3 minutes 

Add the blended cornflour. Stir in the Cointreau or brandy and heat thoroughly 

Serve the sauce with the goose, garnished with fresh herbs

AMAZING ROAST POTATOES

Peel and halve your spuds  

Preheat some Goose fat  in a large sturdy roasting pan to 220ºc, 425 F, gas mark 7 

Boil your spuds for 5 minutes 

Strain and shake them about in the pan to roughen up the edges – not too vigorously or they’ll fall apart 

Sprinkle over a tablespoon of dry semolina and shake again to coat the spuds really well 

Then add the potatoes to the pan and cook for about an hour, check and toss them around in the oil occasionally
