How to Cook:

Heat a frying pan until hot then dry fry the chorizo sausages until browned - Remove and drain on kitchen paper then slice into bite sized pieces.

Place the extra virgin olive oil, garlic puree, vanilla pod and lemon zest and juice in a jar and shake well. Remove the vanilla pod and set aside.

Lay the chorizo and crayfish on a bed of leaves and serve with the dressing on the side.

Crayfish spaghetti with with chillies garlic onion and tomato sauce. This is a slurp-tastic favourite in our house. It's slightly sweet and has just enough heat to introduce any youngster to the beautiful world of the chili pepper, without causing burning lips syndrome.



  • 1 Onion diced
  • 1 Chili diced (seeds optional)
  • 1 Garlic clove sliced
  • 1 tbsp of lemon Juice
  • 50 gm(s) lilliput capers
  • 150 gm(s) crayfish tails (cooked)
  • 200 ml(s) tomato passata
  • 25 gm(s) chopped parsley
  • 1 tbsp(s) sugar
  • 150 gm(s) pasta (uncooked weight)

How to Cook:

Firstly, begin by boiling the pasta in a sturdy saucepan. This usually takes around 8-10 minutes. Times can vary acording to the thickness of the pasta.

Then dice your onion, parsley, chilli and garlic - Grate the zest from your lemon ensuring to leave the white pith on the lemon - you should haave the yellow rind nothing else.

In a large saucepan or wok style pan heat up some extra virgin olive oil oil and begin to fry your onion, chilli, garlic and lemon zest. When the onion and chilli begin to soften add your lilliput capers and crayfish cook for a further minute or so.  The crayfish will shrink back in size and it is perfectly acceptable to add it later if you prefer.

Now add your tomato passata stir into the pan and bring to the boil, adding also the chopped parsley and sugar. At this point you can season with salt and pepper

Finally add your pasta to the sauce and stir thoroughly so the sauce grabs the pasta evenly

Garnish with some parsley and a few crayfish tails.



Now this one is effortless, especially when you use the prepared crayfish tails in brine


  • 8 slices of good bread of your choice
  • Soft butter
  • 150g or more if you wish of crayfish in brine, drained
  • 4tbsp good quality mayonnaise
  • 100g watercress
  • Salt and freshly ground black pepper
  • Lemon wedges to serve


How to Cook:

Pick through the watercress and discard any thick stalks and brown leaves - Mix the crayfish with the mayonnaise and season with salt and pepper
Butter the bread and divide the watercress and crayfish between then sandwich them together and cut the crusts off if you prefer.

Serve with lemon wedges.
