Saffron is one of the most precious and expensive spice in the world.

Saffron as a spice is used for colouring and flavour, while giving a distinct aroma and a beautiful golden colour.

There is a great list of foods where saffron is added, including cheese products, such as cottage cheese, chicken and meat, various spirits and rice.

Commonly used in Indian Cuisine, however there are alot of traditional Cornish recipes. Saffron buns, saffron bread and a lovely dish Cornish game hens with saffron, olives and lemon confit.

Unlike other spices, a good pinch will suffice to add flavour and colour to most dishes.

CLASSIC PAELLA

Ingredients

  • 2 tablespoons olive oil
  • 1 onion, peeled and finely chopped
  • 2 garlic cloves, finely chopped
  • 100g tomato puree
  • 2 bay leaves
  • 150g pack chicken breast, chopped into 2cm pieces
  • 400g Paella rice
  • 1 teaspoon smoked sweet paprika
  • Pinch Saffron
  • Freshly Ground Black Pepper
  • 3 Chicken Stock Cubes, made with 1.5ltr boiling water (Alternatively use homemade stock)
  • 2 x 250g packs of Seafood Selection
  • 20g pack Flat Leaf Parsley, finely chopped
  • 1 lemon, quartered

How to Cook:

Heat the oil in a paella pan over a low heat.

Then add the onion and cook until softened and transparent, this will take approximately 10 minutes. Then add the garlic, tomato puree, bay leaves and chicken and cook for a further 3-4 minutes. Add the rice, paprika, saffron and mix to combine, then gradually add the stock, bring to the boil and continue to cook for 3-4 minutes before reducing the heat to a gentle simmer and cooking for a further 20 minutes, stirring occasionally during this time.

Season to taste with freshly ground black pepper. Add the seafood selection, mix to combine then cover with foil and leave to stand for 5 minutes. Garnish with freshly chopped parsley and lemon wedges.

CHICKEN TAGINE WITH ONIONS & TOMATOES -  (Djej Matisha Mesla)

Ingredients

  • 4 chicken quarters
  • 3 tablespoons Olive oil
  • 3 onions, grated
  • 1kg tomatoes, peeled and cut into pieces
  • Freshly ground black pepper
  • ¼ teaspoon ground ginger
  • 2 teaspoons of ground cinnamon
  • ½ teaspoon saffron
  • 2 tablespoons honey
  • 2 tablespoons sesame seeds, optional
  • Lemon Slices, to serve

How to Cook:

Put all the ingredients, except the honey and sesame seeds, in a large pan and cook gently, covered, turning the chicken pieces over occasionally, until the flesh is so tender it can be pulled off the bone easily.

Remove the chicken and reduce the sauce to a thick sizzling cream.

Stir as it begins to caramelize and be careful that it does not stick or burn.

Stir in the honey, return the chicken pieces to the suace and heat through. Serve the chicken covered with the sauce and if you like, sprinkled with toasted sesame seeds toasted and lemon slices.
