BEETROOT & SMOKED SALMON TOWER

200g Beetroot Sauce
40g pack fresh rocket
100g pack salmon, cut into strips
1 tablespoon black lumpfish roe
1 tablespoon horseradish sauce
1 tablespoon single cream

Spoon some of the beetroot juice on to each plate. Cut the cocktail beetroot in half

How to Cook:

Arrange a small bunch of rocket leaves in the centre of each plate and pile some beetroot halves on top

Divide the smoked salmon into six and place on top of the beetroot, with half a teaspoon of blacklump fish roe to finish

Mix together the horseradish sauce and cream, then season and place six small drops onto the beetroot juice around the beetroot and smoked salmon tower, just before serving garnished with chives

CHORIZO, FETA & BEETROOT SALAD

1 tablespoon olive oil
1 tablespoon gluten free wholegrain mustard
6 tablespoons balsamic vinegar
dash of tabasco sauce
1 tablespoon caraway seeds, pounded with a little olive oil
750g cooked beetroot, sliced into thick rings
20g pack fresh flat leaf parsley or coriander, leaves only
2 sma ll red onions, diced very small
150g chorizo sausage, sliced
120g pack baby leaf salad
75g feta cheese, crumbled
fresh ground black pepper
Freshly ground black pepper
Chives to garnish

Mix th e oil, mustard, v inegar, tabasco & caraw ay seeds into a thin dressing

Pour over the sliced beetroot & leave for ½ hour in a cool place, for the flavours to develop

Before serving, mix in the coriander or parsley, red onion, seasoning & chorizo

Arrange the mixed lettuce leaves onto a large plate or serving dish & arrange the beetroot & sausage mixture on the top, followed by the crumbled feta cheese
