A member of the cod family with grey-olive-green skin. Usually more economical than Cod, but maintaining the flavour. It has soft, white flaky flesh. It can be a particlarly delicate fish to cook that can move very fast from a wonderful dish to be watery if overcooked. Very versatile, it can be poached, pan-fried, used in soup, but best the old fashioned way with plenty of hot oil, batter and home made chips. 

Whiting, due to it's price is a good white fish to use in fish pies, fishcakes and fish mousses.
