While fillets from the smaller fish are most commonly used, it is best when supremes are cut from the larger fillets, giving a meatier portion with large succulent flakes of pure white Fresh Cornish Cod. 

Fresh Cornish Cod is incredibly versatile and takes most flavours. It can be poached, baked, fried, or grilled and served with or without sauce. However care must be taken as it can be easily over cooked.
