Lumpfish roes are a less expensive alternative to genuine caviar. Lumpfish roes are the eggs from a mature female lumpfish, each female can produce up to 200,000 eggs. The fish are caught in static nets in the spawning grounds with the captured fish being collected daily. The roes, which untreated can be quite literally any colour of the rainbow, are removed immediately and chilled. The eggs are processed by the addition of salt and colouring prior to being pasteurised in small jars.
